Butter a 2 quart shallow dish &amp; set aside. Place peach slices in a bowl with lemon juice &amp; vanilla. Toss with a spatula to mix. Place peaches in baking dish. Sift together flour, sugar &amp; salt. Stir almond extract into the egg. Drizzle it &amp; melted butter over dry ingredients &amp; stir with a fork until they are moistened &amp; mixture is crumbly. Sprinkle crumbs loosely over peaches. Bake 30-35 minutes. Serve warm or hot with ice cream. Makes 6 servings.
