In a microwave oven or the top half of a double boiler, melt 1 cup of the mint chocolate chips, and set aside to cool. In a large bowl, cream butter and sugar<br \/>\n add melted chocolate, eggs and vanilla. Stir in flour, baking powder, and salt. Then stir in the remaining mint chocolate chips. Unwrap and cut the mini peppermint patties into 4 pieces. Wrap about 1 tablespoon of dough around each quarter. Roll balls in confectioners&#8217; sugar and place 1 1\/2 inches apart on the cookie sheet. Bake for 10 to 12 minutes in the preheated oven.
