{"id":2895,"date":"1999-12-04T13:04:19","date_gmt":"1999-12-04T13:04:19","guid":{"rendered":"https:\/\/www.fiveforks.com\/katfood\/provencale-beef-stew\/"},"modified":"1999-12-04T13:04:19","modified_gmt":"1999-12-04T13:04:19","slug":"provencale-beef-stew","status":"publish","type":"post","link":"https:\/\/www.fiveforks.com\/katfood\/provencale-beef-stew\/","title":{"rendered":"Provencale Beef Stew"},"content":{"rendered":"<div class=\"asset-body\">\n<p>2 lbs. beef stew meat<br \/>\n2 Tbs. oil<br \/>\n1 1\/2 Tb. flour<br \/>\n1 c. wine<br \/>\n1 c. beef broth or water<br \/>\nSalt &amp; pepper<br \/>\nFor the Sauce:<br \/>\n1 onion, chopped<br \/>\n3 cloves garlic, minced<br \/>\n4 Tbs. olive oil<br \/>\n16 oz. can tomatoes<br \/>\nPinch of thyme<br \/>\nBay leaf<br \/>\n3 red peppers, cut into strips<br \/>\n2 Tbs. flour<br \/>\n1 c. red wine<br \/>\n1 package frozen artichoke hearts<br \/>\n1\/2 c. black olives<\/p>\n<\/div>\n<p><!--more--><\/p>\n<div class=\"asset-more\" id=\"more\">\n<p>Brown the meat in oil, sprinkle with flour &amp; cook, for a few minutes. Add the wine &amp; beef broth, cover &amp; simmer. Meanwhile, in a heavy saucepan, saute the onion &amp; garlic in 2 Tbs. olive oil. Add the tomatoes, season with thyme &amp; bay leaf &amp; simmer. In a frypan, heat the remaining 2 Tbs. olive oil. Saute the red pepper, sprinkle with flour &amp; cook 2 minutes. Add the red wine slowly &amp; stir until it thickens. Now add this to the tomato mixture. Cover loosely &amp; cook for half an hour, then scrape into the pot with the meat. Cook together until the meat is tender, about 3 hours in all, adding the artichokes &amp; olives for the last five minutes.
