Dijon mustard<br \/>\n2 cloves garlic, finely minced<br \/>\nSalt &amp; pepper<br \/>\n1\/2 c. vegetable oil<br \/>\n1\/3 c. walnut oil<br \/>\nSalad:<br \/>\n1 c. cooked black-eyed peas, drained<br \/>\n1\/2 c. cooked rice<br \/>\n1\/4 c. finely chopped red onion<br \/>\n1\/4 c. finely chopped red bell pepper<br \/>\n1\/4 c. finely chopped yellow bell pepper<br \/>\n1\/4 c. finely chopped green onion<br \/>\n2 heads Boston lettuce, shredded<\/p>\n<\/div>\n<p><!--more--><\/p>\n<div class=\"asset-more\" id=\"more\">\n<p>Shake all dressing ingredients together in a jar. Mix together alll salad ingredients except lettuce. Toss with dressing. Let all ingredients marinate 30 minutes to an hour at room temperature.
