Combine zucchini with walnuts &amp; 2 Tbs. flour. Set aside. Combine 3 c. flour with cinnamon, nutmeg, soda, baking powder &amp; salt. Set aside. Beat eggs. Gradually beat sugar &amp; then oil into eggs. With wooden spoon, blend a little of flour mixture &amp; then some zucchini mixture into eggs. Keep adding ingredients until well blended. Add raisins &amp; remaining walnuts. Don&#8217;t overmix. Turn batter into greased &amp; floured loaf pans &amp; bake 55 minutes. Cool 10 mins in pan. This freezes well.
