Let rest 5 minutes. Beat in salt &amp; flours. Use a wooden spoon til it is too thick to mix, then turn it out onto a floured surface &amp; knead til smooth (8-10 minutes). Brush with oil &amp; let rise &amp; double in bulk (1 hour). Preheat oven to 450. Punch dough down and divide into 6 equal parts.
