{"id":2772,"date":"1999-12-04T13:35:51","date_gmt":"1999-12-04T13:35:51","guid":{"rendered":"https:\/\/www.fiveforks.com\/katfood\/couscous-with-chicken\/"},"modified":"1999-12-04T13:35:51","modified_gmt":"1999-12-04T13:35:51","slug":"couscous-with-chicken","status":"publish","type":"post","link":"https:\/\/www.fiveforks.com\/katfood\/couscous-with-chicken\/","title":{"rendered":"Couscous with Chicken"},"content":{"rendered":"<div class=\"asset-body\">\n<p>1 large onion, sliced into thin rings<br \/>\n2 large clove garlic, minced<br \/>\n1 Tb. olive oil<br \/>\n3 lbs. chicken pieces, skinned<br \/>\n29 oz. can stewed tomatoes &amp; juice<br \/>\n3 medium carrots, in 1&#8243; lengths<br \/>\n2 stalks celery, cut into 1&#8243; lenghts<br \/>\n1 large sweet potato, peeled &amp; cut into 1&#8243; pieces<br \/>\n1\/2 tsp. cinnamon<br \/>\n1\/2 tsp. ground cumin<br \/>\n1\/4 tsp. turmeric<br \/>\nSeveral dashes hot sauce<br \/>\n2 tsps. honey<br \/>\n1\/4 c. raisins<br \/>\n19 oz. can garbanzo beans, drained<br \/>\n1\/4 c. minced fresh cilantro<\/p>\n<\/div>\n<p><!--more--><\/p>\n<div class=\"asset-more\" id=\"more\">\n<p>Saute onions &amp; garlic in oil over medium heat for 3 minutes. Remove onion &amp; garlic from the pan, leaving the oil behind. Brown the chicken pieces in the oil, adding a little more oil if necessary. Add salt &amp; pepper. Return onion mixture to the pan, add tomatoes &amp; liquid, carrots, celery, sweet potato, cinnamon, cumin, turmeric, hot sauce &amp; honey. Stir the ingredients gently to combine, leaving chicken pieces at the bottom of the pan. Bring the stew to a boil, cover, reduce heat &amp; simmer about 25 minutes. Add raisins &amp; garbanzo beans<br \/>\n cover &amp; simmer another 10-15 minutes. Cook couscous according to package directions. Serve the stew over the cooked couscous.
