Season with salt &amp; pepper &amp; chill overnight. Place flour in a paper bag. Set aside. Dip chicken in buttermilk, shake off excess &amp; place a few pieces at a time in bag of flour. Remove chicken &amp; shake off excess flour. Heat oven to 350. Fill large skillet with oil to 1 1\/2&#8243; deep. Heat until drop of water sizzles in oil. Add chicken pieces, a few at a time. Fry until golden brown. Place chicken in roasting pan.
