Remove from heat &amp; stir in flour. Gradually add milk, mixing well after each addition. Cook over medium heat, stirring constantly, until mixture comes to a boil. Remove from heat &amp; add cheese, set aside. Beat egg lightly in a medium bowl. Gradually dd the sauce to the egg, stirring briskly. Return mixture to saucepan &amp; cook over medium heat, stirring constantly for 3 milnutes or until almost boiling (do not bring to a full boil). Season with salt &amp; pepper. For each open-face sandwich, place 2 slices of toast on a flameproof dish or metal pan. Cover each slice with 1 1\/2 oz of turkey. Pour 3\/4 c. of sauce over turkey. Place on middle rack 8&#8243; below broiler. Broil at 550 for 4 minutes or until sauce is speckled brown &amp; bubbly. Remove &amp; cross 2 pieces of bacon on top.
