{"id":2687,"date":"1999-12-04T13:04:25","date_gmt":"1999-12-04T13:04:25","guid":{"rendered":"https:\/\/www.fiveforks.com\/katfood\/pasta-with-scallops\/"},"modified":"1999-12-04T13:04:25","modified_gmt":"1999-12-04T13:04:25","slug":"pasta-with-scallops","status":"publish","type":"post","link":"https:\/\/www.fiveforks.com\/katfood\/pasta-with-scallops\/","title":{"rendered":"Pasta with Scallops"},"content":{"rendered":"<div class=\"asset-body\">\n<p>1 lb. sea scallops<br \/>\n1 1\/3 c. vegetable oil<br \/>\n1 shallot, peeled, minced<br \/>\n1 tsp. fresh ginger, minced<br \/>\n1 c. soy sauce<br \/>\n3\/4 c. oyster sauce<br \/>\n1 lemon, juiced<br \/>\n1 package enoki mushrooms<br \/>\n12 oz. fresh black pasta<br \/>\n12 oz. fresh white pasta<br \/>\n1 red pepper, minced<br \/>\n1 yellow pepper, minced<br \/>\n4 Tbs. minced chives<br \/>\n2 oz. red caviar<br \/>\n1 bunch red oak leaf lettuce<br \/>\n1 cherry tomato for garnish<\/p>\n<\/div>\n<p><!--more--><\/p>\n<div class=\"asset-more\" id=\"more\">\n<p>In a skillet, quickly half cook scallops &amp; shallots in 1\/3 c. oil &amp; finish with 1\/3 c. oyster sauce, minced ginger, soy sauce &amp; lemon juice. Set scallops to cool in the refrigerator. Cook pasta. Cool &amp; drain well. Remove cooking juices from the scallops &amp; blend with remaining oyster sauce &amp; remaining 1 c. salad oil. Mix peppers &amp; chives with pasta. Arrange pasta in middle of plate in a nest. Place scallops in a semicircular pattern on half of the plates alternating with a 3&#8243; length of fresh chives. Garnish each scallop with 1 red slamon caviar egg. Decorate the plates at 12 o&#8217;clock with red oak leaf lettuce, enoki mushrooms &amp; a cherry tomato. Serve well chilled.
