Add boiling water, stirring constantly. Cook over medium heat 5 minutes until thickened &amp; clear, stirring constantly. Add carrot, orange juice &amp; lemon juice. Simmer 5 minutes longer. Stir in butter until creamy. Serve warm over steamed pudding, fruitcake or poundcake.
