Mix the paprika &amp; vinegar, add to the pot &amp; cook a few minutes. Stir in the pork cubes &amp; stir over high heat until they lose their pink color. Add the tomato paste mixed with water &amp; season with salt, pepper &amp; thyme, cover &amp; simmer for about 2 hours. Just before serving, pound the caraway, lemon zest &amp; garlic with a mortar &amp; pestle or drop through the feed tube of a food processor while the metal blade spins. Add to the stew, cook 15 minutes &amp; serve.
