{"id":2635,"date":"1999-12-04T13:35:49","date_gmt":"1999-12-04T13:35:49","guid":{"rendered":"https:\/\/www.fiveforks.com\/katfood\/lemon-meringue-cake\/"},"modified":"1999-12-04T13:35:49","modified_gmt":"1999-12-04T13:35:49","slug":"lemon-meringue-cake","status":"publish","type":"post","link":"https:\/\/www.fiveforks.com\/katfood\/lemon-meringue-cake\/","title":{"rendered":"Lemon Meringue Cake"},"content":{"rendered":"<div class=\"asset-body\">\n<p>Cake:<br \/>\n1 c. vegetable shortening<br \/>\n2 c. sugar<br \/>\n3 c. sifted cake flour<br \/>\n1 Tb. baking powder<br \/>\n3\/4 c. milk<br \/>\n1\/2 tsp. lemon extract<br \/>\n1\/2 tsp. vanilla<br \/>\n6 egg whites, stiffly beaten<br \/>\n1 1\/2 c. shredded coconut<br \/>\n Lemon filling:<br \/>\n1\/2 c. butter<br \/>\n1 c. sugar<br \/>\n6 egg yolks, beaten<br \/>\n3\/4 c. fresh lemon juice<br \/>\n1 Tb. cornstarch<br \/>\n4 tsps. grated lemon peel<br \/>\n1\/8 tsp. salt<br \/>\n Fluffy White Icing:<br \/>\n2 egg whites<br \/>\n1 1\/2 c. sugar<br \/>\n1\/8 tsp. salt<br \/>\n1\/2 c. water<br \/>\n1\/2 tsp. vanilla<br \/>\n1\/2 tsp. lemon extract<\/p>\n<\/div>\n<p><!--more--><\/p>\n<div class=\"asset-more\" id=\"more\">\n<p>Cream shortening<br \/>\n gradually add sugar, beating until light &amp; fluffy. Sift together flour &amp; baking powder<br \/>\n add alternatly with milk. Stir in flavoring. Fold in egg whites. Pour into 3 prepared round layer pans. Bake 25 minutes or until golden brown in 350 oven. Cool. Spread Lemon Filling between layers &amp; top of cake. Frost sides with Fluffy White Icing &amp; sprinkle shredded coconut. Lemon Filling: Combine all filling ingredients in saucepan. Cook over low heat, stirring until thickened. Cool slightly before spreading. Fluffy White Icing: Combine all icing ingredients except the flavorings in large saucepan. Beat until thoroughly blended. Place over low heat &amp; beat 7 minutes or until stiff peaks form. Remove from heat.
