Place over medium heat until hot. Whisk together egg &amp; sugar. Whisk in hot cream mixture &amp; pour back into pan. Cook over medium heat, stirring constantly, until slightly thickened, about 5-7 minutes. Pour into a bowl &amp; stir in dried cherrries &amp; vanilla. Cool slightly &amp; refrigerate to chill completely. Stir in chocolate. Transfer mixture into ice cream machine &amp; freeze.
