Mix in egg and<br \/>\nadd flour. Do not overwork. Wrap in plastic and refrigerate one hour. <\/p>\n<p><\/p>\n<p>To make the filling: Preheat oven to 350 degrees. Whisk together<br \/>\nsugar and butter until light and fluffy. Gradually add eggs. Gently add<br \/>\nthe ground almonds, flour and almond extract. Do not mix too much, or<br \/>\nthe mixture will separate. Roll out the pastry to 1\/8-inch thickness.<br \/>\nCut out round shapes and line each cup in a muffin pan. Put 1\/2<br \/>\nteaspoon plum jam in each. Spoon or pipe the filling on top of the jam.<br \/>\nPlace one almond on top as a garnish. Bake for 20 minutes or until<br \/>\ngolden brown.
