{"id":2545,"date":"1999-12-04T13:04:21","date_gmt":"1999-12-04T13:04:21","guid":{"rendered":"https:\/\/www.fiveforks.com\/katfood\/banana-pudding\/"},"modified":"1999-12-04T13:04:21","modified_gmt":"1999-12-04T13:04:21","slug":"banana-pudding","status":"publish","type":"post","link":"https:\/\/www.fiveforks.com\/katfood\/banana-pudding\/","title":{"rendered":"Banana Pudding"},"content":{"rendered":"<div class=\"asset-body\">\n<p>12 oz. box vanilla wafer cookies<br \/>\n4 large firm, ripe bananas <br \/>\n3\/4 c. granulated sugar<br \/>\n1\/4 c. all purpose flour<br \/>\n1\/8 tsp. salt<br \/>\n3 c. milk<br \/>\n1 large egg<br \/>\nYolks of 3 eggs<br \/>\n1\/4 c. butter<br \/>\n1 tsp. vanilla<br \/>\nMeringue Topping:<br \/>\nWhites of 3 eggs<br \/>\n1\/2 tsp. granulated sugar<br \/>\n1\/2 tsp. freshly squeezed lemon<br \/>\n1\/2 tsp. vanilla<\/p>\n<\/div>\n<p><!--more--><\/p>\n<div class=\"asset-more\" id=\"more\">\n<p>Heat oven to 350. In deep 2 quart casserole toss cookies &amp; bananas &amp; mix well<br \/>\n set aside.. In 2 quart saucepan combine 3\/4 c. sugar, flour &amp; salt<br \/>\n using wire whisk or fork, beat in milk until blended &amp; smooth. Bring to boil over med-low heat<br \/>\n cook 1 minute, stirring constantly. Remove from heat. In small bowl beat egg &amp; egg yolks, adding 2-3 Tbs. hot milk mixture. Stir egg mixture into saucepan set over low heat<br \/>\n cook about 2 minutes, stirring constantly until mixture is hot but not boiling. Stir in butter until melted. Remove from heat<br \/>\n stir in 1 tsp. vanilla. Pour mixture over cookies &amp; bananas in casserole<br \/>\n set aside. Meringue: In large bowl with electric mixer at high speed, beat egg whites, 1\/2 tsp. sugar, lemon juice &amp; 1\/2 tsp. vanilla until stiff peaks form. Spoon mixture over top of pudding, making sure meringue touches sides of casserole all around .
