Set aside. Saute beef in oil, seasoning with salt, &amp; pepper &amp; allspice. Add parsley &amp; green onions during the last minute of cooking. Taste for seasoning. If you like spicy food, add a bit of cayenne pepper. Let cool in a colander until the oil has dripped away. Holding the potato ball in left hand, insert index finger into mixture &amp; create a hollow center in the middle. Fill with meat mixture &amp; seal opening. Place croquette between palms of hands &amp; press to flatten slightly into a patty shape. When all potato patties have been stuffed, dip each one in beaten egg &amp; then into bread crumbs.
