Lay out 5 or more pieces in a row on work surface. At one end of each strip, place generous chunk of cheese, about 1 rounded Tb. Sprinkle generously with mint &amp; a bit of pepper. Fold pastry as if it were a flag: make a diagonal fold to form a triangle, then fold straight up<br \/>\n then make another diagonal fold in the opposite direction onto the end of the strip. Seal the end with a bit of egg white. Repeat until all the cheese is used. Deep fry &amp; serve.
