{"id":2478,"date":"1999-12-04T13:35:53","date_gmt":"1999-12-04T13:35:53","guid":{"rendered":"https:\/\/www.fiveforks.com\/katfood\/thai-steak-pasta-salad-with-pnut-pepper-dressing\/"},"modified":"1999-12-04T13:35:53","modified_gmt":"1999-12-04T13:35:53","slug":"thai-steak-pasta-salad-with-pnut-pepper-dressing","status":"publish","type":"post","link":"https:\/\/www.fiveforks.com\/katfood\/thai-steak-pasta-salad-with-pnut-pepper-dressing\/","title":{"rendered":"Thai Steak &amp; Pasta Salad with P&#8217;nut-Pepper Dressing"},"content":{"rendered":"<div class=\"asset-body\">\n<p>2 1\/2 c. broken fine noodles<br \/>\n1\/3 c. rice wine vinegar<br \/>\n1\/3 c. salad oil<br \/>\n3 Tbs. soy sauce<br \/>\n2 Tbs. peanut butter<br \/>\n1 Tb. chopped fresh lemongrass or fresh cilantro<br \/>\n2 cloves garlic, minced<br \/>\n1\/4 tsp. crushed red pepper<br \/>\n1 lb. boneless beef top sirloin steak, cut 1&#8243; thick<br \/>\n5 c. shredded Savoy or Chinese cabbage, spinach, romaine\/bok choy<br \/>\n1\/2 c. shredded carrot<br \/>\n4 green onions, cut lengthwise in fourths &amp; bias-sliced in 1&#8243; pieces<br \/>\n1\/2 of a medium cucumber, sliced<br \/>\n1 medium yellow squash, julienne<br \/>\n1\/4 c. chopped peanuts<br \/>\nFresh red hot peppers<\/p>\n<\/div>\n<p><!--more--><\/p>\n<div class=\"asset-more\" id=\"more\">\n<p>Cook noodles in boiling salted water<br \/>\n drain, cover &amp; chill. For dressing, in a blender container combine vinegar, salad oil, soy sauce, peanut butter, lemongrass, garlic, &amp; crushed red pepper. Cover &amp; blend till combined. Place meat in a shallow dish. Add 1\/3 c. dressing<br \/>\n turn once. Cover<br \/>\n marinate in refrigerator for 2 hours. Drain meat, discarding marinade. Place steak on unheated rack of a broiler pan. Broil 3&#8243; from heat for 12-15 minutes for medium doneness, turning once. Cut in thin strips. Meanwhile, in a mixing bowl combine noodles, cabbage, carrot, &amp; green onions. Add about 1\/4 c. of remaining dressing<br \/>\n toss to coat. Arrange noodle mixture on 4 salad plates<br \/>\n top with warm meat, cucumber, &amp; squash. Drizzle with remaining dressing<br \/>\n sprinkle with chopped peanuts.
