Bring barely to a boil<br \/>\n bubbles should form around the edges of the pan. Remove from heat &amp; let mixture stand, covered, for 1 hour. Puree peaches with their syrup. Add lemon juice. Whe half &amp; half mixture is cool, strain it &amp; add to pureed peaches. Blend &amp; chill. To serve, pour soup into bowls &amp; garnish with 3 thin slices of fruit, aranged in a fan shape, &amp; a mint leaf.
